I really love japchae.👍👍 I think one reason foreigners like japchae among Korean dishes is because they enjoy noodle dishes—after all, they eat a lot of pasta and stir-fried noodles. The chewy texture of japchae’s glass noodles is sometimes perceived as a kind of “gluten-free pasta,” which makes it even more appealing. Plus, japchae has such a beautiful mix of colors. With all the vegetables, it looks healthy and appetizing, too.<3
