Siraegi-guk is one of Korea’s traditional soups, made by boiling dried radish greens (the leaves and stems of radishes).
Ingredients: siraegi (dried radish greens), beef or pork, garlic, soy sauce, sesame oil, salt, and more.
Taste and characteristics: The dried greens are soaked in water until soft, then boiled with broth, creating a savory and refreshing flavor. It has a subtle sweetness and nutty taste, making it a traditional healthy dish that’s gentle on the stomach.
Health benefits: Siraegi is rich in dietary fiber and calcium, which is good for digestive health and bone strength. It’s often cooked with a soybean paste (doenjang) base!
