This is my absolute favorite Korean side dish, called Deodeok-muchim. Deodeok is a wild mountain root, often referred to as ‘Ginseng’s cousin’ because of its incredible health benefits and distinctive aroma. It has a wonderful crunch and a refreshing, slightly bitter undertone that is perfectly balanced with a sweet and spicy gochujang (red chili paste) dressing. The scent is deep and earthy, unlike any other vegetable.
