I’d like to recommend the perilla oil makguksu I had when I traveled to Wonju, Gangwon Province.
Eating it together with tender bossam (boiled pork) was a great combination.
Unlike the makguksu most people are familiar with, it’s not overly spicy or strong in flavor. Instead, it stands out for the nutty aroma and rich umami of perilla oil.
Even if you’re not in Wonju, you can find places that serve this dish in many regions, so I highly recommend giving it a try.
