This is Korean-style pork cutlet, also known as Gyeongyangsik pork cutlet. The restaurant doesn’t seem to be the type that drenches the cutlet in a lot of sauce. One of the defining features of Korean pork cutlet is the thinly pounded meat. It’s also traditionally served with the sauce already poured over the cutlet rather than on the side.
