Have you heard of naeng-jeyuk? Unlike the usual warm bossam (Korean boiled pork), the pork is boiled, chilled, and even aged in the refrigerator before being served cold! I tried it at a restaurant that specializes in it, and it was such a unique and delicious experience. That said, I think it might be a bit of a hit-or-miss dish depending on your taste!
