The kimchi was slow-braised until it became incredibly tender, and the dish was served with pork belly and premium Hanwoo beef large intestines. I couldn’t help but think, “Wow, I didn’t know this kind of flavor combination was possible!” The braised kimchi itself was delicious, and all the ingredients were equally flavorful. It was truly a restaurant where every part of the dish was outstanding.
