Step 1:

Remove excess blood from 150 g beef and 150 g pork using paper towels. Mix with soy sauce, mirim, garlic, pepper, sesame oil, ginger powder, and salt.

Step 2:

Finely chop onion, carrot, green onion, and red chili (for garnish). Mash tofu with a knife, then wrap in a dry cloth and squeeze out moisture

Step 3:

In a large bowl, combine beef, pork, tofu, chopped vegetables, egg white, and 1 tbsp frying mix. Add seasoning ingredients (garlic, salt, glutinous rice flour 2 tbsp, sesame seeds, sesame oil). Mix until well combined. (Keep egg yolk aside for mixing into the batter if needed.)

Step 4:

Take a spoonful of mixture and shape into small round patties, about 1 cm thick.

Step 5:

Dredge each patty lightly in frying mix. Dip into beaten egg (with a pinch of salt). Place a small slice of red chili on top for garnish.

Step 6:

Heat a pan with a little oil over medium-low heat. Fry patties on one side until golden brown, then flip once to cook the other side. Avoid flipping too often to keep the patties moist and intact.
